Beetroot, Coconut and Lychee Smoothie with granola and berries

I used to be an ‘oats for breakfast’ type of girl until I got my Nutribullet. Now, I can’t remember the last time I had oats for breakfast, lol! I keep looking forward to my smoothie breakfasts (and now dinner). With the sheer amount of fruit and vegetable combinations that can be done, smoothies hardly get boring.

I had never had lychees before this smoothie, in fact, I got them on a whim while doing a grocery shop. After eating this smoothie, it safe to say that I will be buying lychees more often. I hope you enjoy this recipe as much I did.

Beetroot, Coconut & Lychee Smoothie with granola and berries

Ingredients

 

  • 2 bananas
  • 6 lychees
  • 1 tbsp beetroot powder
  • 30 g mango chunks
  • 10 raspberries
  • 10 strawberries
  • 150 g plain soy yoghurt (unsweetened)
  • 20 ml almond milk (unsweetened)
  • 10 blueberries
  • 20 g granola
  • 1 tsp desiccated coconut
  • 4 pecans
  • 1/2 tsp chopped nuts
  • 1/2 tsp mixed seeds

Instructions

  1. In a smoothie blender, combine bananas, lychee, beetroot powder, raspberries, strawberries, yoghurt, almond milk, and ½ teaspoon desiccated coconut. Blend until smooth and then transfer into a bowl.
  2. Top the smoothie with the remaining strawberries, mango, blueberries, mixed nuts, mixed seeds and desiccated coconut.
  3. Enjoy!
