Gluten-Free Kale, Quinoa and Brown Rice Penne Pasta with Tomato Sauce

Pasta is a firm favourite in my household! We usually have the regular varieties made from durum wheat, but once in a while, I eat the gluten-free variety made from corn. This kale, quinoa and brown rice version is just as yummy as the regular version, but it tends to break apart really easily.  You need to handle it very gently when cooking.

It is no secret that tomato-based sauces are my no.1 choice when it comes to pasta. That could perhaps be because I’ve grown up eating lots of tomato sauces. But, I know you will agree with me that tomato sauces are delish!  Their deliciousness is further complemented by the fact that they’re highly nutritious.


Tomatoes are a great source of vitamin A and C, a good source of fibre. They are also a good source of the cancer-fighting antioxidant, lycopene. However, tin tomatoes and tomato puree contain typically higher levels of lycopene than fresh tomatoes.  In addition, your body absorbs a lot more of the lycopene present in processed varieties of tomatoes.

When it comes to buying food, people typically say that locally-souced is better. This is absolutely not the case for tomatoes. Tomatoes that grow in Mediterranean regions have much higher amounts of lycopene than those grown in colder European regions. They also taste a lot better (in my humble opinion). If you cook a tomato sauce with an authentic Italian branded tin tomato and compare it with one from a colder region, you’ll notice a significant difference in taste.

Tomato sauces are always best when slow cooked for hours on end. I do this when I have a lot of time on my hands, but when I don’t a good quality tomato comes in very handy. I am usually able to make a flavourful sauce without much effort in 20 minutes.

My ultimate favourite brand of tin tomato is Cirio, but I was happy to try out this one by Tarantella for my pasta sauce today.

Gluten-Free Kale, Quinoa and Brown Rice Penne Pasta with Tomato Sauce

Ingredients

  • 2 medium shallots, finely chopped
  • 3 medium garlic cloves, finely minced
  • 400g tin of chopped tomatoes
  • 1 tsp Italian herb seasoning
  • 1 vegetable stock cube
  • 200g pasta

Instructions

Add a splash of water or 1 tablespoon of olive oil to a medium saucepan. Once warm, add the onions and garlic and cook for 1-2 minutes until softened and taking care not to burn the garlic.

Add the chopped tomatoes, mixed herbs and vegetable stock cube and stir thoroughly. Cook for around 10 minutes on medium heat, and then start cooking the pasta according to the packet instructions.

Turn the heat down to a simmer on the pasta sauce and cook for a further 10 minutes. Taste for seasoning, adding a little salt (if necessary) and some black pepper.

Serve the pasta with a generous helping of tomato sauce and garnish with freshly chopped basil or parsley.
