Skin-Loving Red Quinoa and Berry Porridge

I instinctively choose oats whenever I want porridge, and unless you eat a gluten-free diet, I bet you do the same. Did you know that you can make a delicious porridge with other grains including quinoa?

Quinoa with its nutty flavour, adds some excitement back into porridge. If you overcook the quinoa, you’ll miss out on its nutty flavour and end up with tasteless mush. Quinoa usually cooks within 15 minutes, and you’ll know its ready when the white germ starts to stick out. 


Quinoa is gluten-free, so it is perfect for you if you have an intolerance to gluten or if you avoid gluten for other reasons. It is the only grain that provides all the essential amino acids we need to stay healthy. And since it provides the amino acid, L-lysine, it promotes skin renewal. 

Quinoa is a rich source of zinc, a mineral that prevents scarring and helps to balance sebum production – perfect if you have oily and blemish-prone skin like myself. Zinc also supports the production of vitamin A, which is also essential for skin health. This grain is also a rich source of silica, a mineral that promotes the production of elastin and collagen, proteins that keep the skin toned, supple and firm. 

Red quinoa, unlike white quinoa, is a rich of betacyanins, the same antioxidant with superior health benefits that gives beetroot its red colour.

Berries are by far my most favourite type of fruit, and that’s not just because they’re delicious. They contain really high amounts of antioxidants that protect us from free radicals and harmful contaminants in the environment, and also keep our immune system in tip-top conditions. Berries, particularly strawberries and blackberries provide ellagic acid, an antioxidant that prevents hyperpigmentation and brightens the skin tone.

Pumpkin seeds complete this recipe. They are a wonderful source of protein and anti-inflammatory omega-3 fats. They are also a source of zinc.

Skin-Loving Red Quinoa and Berry Porridge

Description

Ingredients

  • 75g red quinoa 
  • 200ml unsweetened almond milk
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 2 tsp agave nectar

To Top

  • 100g berry mix 
  • 1 tbsp toasted pumpkin seeds
  • 2 tbsp coconut yoghurt 
  • 1 tsp desiccated coconut

Instructions

  1. Combine quinoa, almond milk, cinnamon vanilla extract and agave nectar in a medium saucepan over medium heat. Bring to a boil then reduce the heat to a simmer  and cook for 10 minutes or until the quinoa is just cooked.
  2.  Allow it to cool for a few minutes then top with berries, pumpkin seeds, coconut yoghurt and desiccated coconut.
